Super Easy Old Fashioned Peach and Blueberry Cobbler

This is a five minute wonder. That's all it takes to put this together.  And once you make this, it will be your go-to recipe for barbecues and family dinners. Everyone loves it, especially topped with ice cream.

Ingredients

  • 4 ounces butter
  • 1 16 ounce bag frozen peaches , unthawed
  • 1 12 ounce bag frozen blueberries , unthawed
  • 1 cup sugar plus 3 tablespoons for the top
  • 1 cup self-rising flour
  • 1 cup whole milk
  • grated peel of 1 lemon
  • juice of ½ lemon
  • 1 pint vanilla ice cream

Instructions

  1. Preheat oven to 400 degrees. Place the butter in a 10 inch pie plate and melt in the oven for 5 minutes until melted. Spread the frozen peaches and blueberries evenly over the butter. Squeeze the lemon juice over the fruit.

Make the batter:

  1. In a medium bowl, whisk the sugar, flour, milk and lemon peel until well combined. Pour the batter evenly over the fruit and sprinkle evenly with the reserved sugar.
  2. Place a sheet of aluminum foil under the pie plate and mold the foil around the dish to catch any spillover from the cobbler. You can also place the pie plate in a large roasting pan. Bake for 60 minutes until the top is crisp and brown. Check the cobbler after 40 minutes and if it is browning too quickly, lower the heat to 375 degrees.  Let sit for 10 minutes before serving.

  3. Serve warm topped with ice cream.
