ONE BOWL CHEWY CHOCOLATE CHIP COOKIE BARS

This chewy one-bowl quick chocolate chip treat is soft in the middle with a slight crunch on top. The flaky sea salt adds a savory element that really enhances the caramelized flavors of the brown sugar.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup unsalted butter softened at room temperature
  • 1 1/2 cups light brown sugar loosely packed
  • ½ cup granulated sugar
  • 2 eggs at room temperature
  • 1 tablespoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • flaked sea salt for top optional

Instructions

  1. Preheat oven to 350 degrees F. Butter a 9×13 inch glass baking dish.
  2. In a small bowl, whisk together the flour, baking soda and salt and set aside.
  3. In a large bowl, combine the softened butter, light brown and granulated sugars. Beat the mixture at medium speed with a hand mixer or you can mix everything with a wooden spoon until the mixture is well combined and the sugars have lost their graininess. Add the eggs one at a time, beating well. Stir in the vanilla extract.
  4. Add the flour mixture all at once and beat at medium speed (or with a spoon) just until the dry ingredients are well combined. Stir the sides of the bowl with a spatula and beat for about another minute to make sure all the flour is blended. Fold in the chocolate chips .
  5. Evenly drop the batter in large spoonfuls into the buttered pan and gently press the mixture with lightly floured fingers until even.
  6. Bake for 22-25 minutes until the top is brown and the cookies are just cooked in the center. Sprinkle with flaked sea salt, if desired.
  7. Let cool completely before slicing into 20 squares.
