Maple Roasted Carrot Hummus

Creamy, bright orange and so delicious. It's a party in a bowl so invite a bunch of people to join you and you will increase your popularity for sure.

Ingredients

  • 2 pounds carrots peeled and whole
  • 2 tablespoons olive oil
  • 2 tablespoons thick maple syrup like Brandless Organic Maple Syrup
  • ¾ teaspoon sea salt
  • 1/3 cup tahini well mixed and at room temperature
  • ½ teaspoon cumin
  • 1 teaspoon salt
  • ¼ cup cold orange juice
  • For garnish:
  • 1 tablespoon olive oil
  • ¼ cup finely chopped cilantro or Italian parsley

Instructions

  1. Preheat oven to 400 degrees.
  2. Plece all of the carrots on a large baking pan with sides. Combine the olive oil and maple syrup and pour the mixture over the carrots. Sprinkle the carrots with the salt.
  3. Bake the carrots in the oven on the bottom shelf for one hour until they are soft.
  4. Remove the carrots from the over and without letting them cool, put them in the Vitamix or a blender with the remaining ingredients. Puree the mixture until it is smooth and creamy. If the carrot hummus is too thick you can add ice water 1 tablespoon at a time until it is the desired consistency. Taste for salt and add more if needed.
  5. Garnish the hummus with olive oil and chopped cilantro or parsley.
