Ingredients
2poundscarrotspeeled and whole
2tablespoonsolive oil
2tablespoonsthick maple syruplike Brandless Organic Maple Syrup
¾teaspoonsea salt
1/3cuptahiniwell mixed and at room temperature
½teaspooncumin
1teaspoonsalt
¼cupcold orange juice
For garnish:
1tablespoonolive oil
¼cupfinely chopped cilantro or Italian parsley
Instructions
Preheat oven to 400 degrees.
Plece all of the carrots on a large baking pan with sides. Combine the olive oil and maple syrup and pour the mixture over the carrots. Sprinkle the carrots with the salt.
Bake the carrots in the oven on the bottom shelf for one hour until they are soft.
Remove the carrots from the over and without letting them cool, put them in the Vitamix or a blender with the remaining ingredients. Puree the mixture until it is smooth and creamy. If the carrot hummus is too thick you can add ice water 1 tablespoon at a time until it is the desired consistency. Taste for salt and add more if needed.
Garnish the hummus with olive oil and chopped cilantro or parsley.
