What could be better than a Super Easy Old Fashioned Peach and Blueberry Cobbler that is made in only one bowl with a few ingredients? Your summer dessert desires have been fulfilled!
For someone in MEtirement, trying to stay on the cutting edge and relevant (a very millenial word!) can be challenging. Anyone who blogs knows that keeping abreast of the latest technologies, trends, marketing techniques, algorithms, analytics etc etc etc is a full time job. A necessary evil if you want a blog, Pinterest and Instagram and all of the other forms of social media to work well for you.
So why today do I venture backwards into a classic, traditional recipe? Because the world is spinning too quickly for me. Is it spinning too quickly for you? The one calming insluence in my life is good, old fashioned comfort food that never goes out of style.
You can talk about analytics all day long but they will never make you feel as good as a wonderful, warm, crispy topped fruit cobbler. And if you can make such fruit cobbler in one bowl, in five minutes, you are going to be very, very happy in this crazy, fast-moving, unpredictable world! A step back into old-fashioned comfort food is never, ever a bad thing. Especially now.
Please note that the fruit in this Old Fashioned Peach and Blueberry cobbler should be kept frozen to keep the color of the fruit all bright and fresh. You can make this with fresh fruit if you want to do all of the peeling, slicing etc but the frozen version works really well. If you have so much extra time on your hands and want to knock yourself out, feel free. If not, take five minutes to put this together and you will definitely want to make this again.
Super Easy Old Fashioned Peach and Blueberry Cobbler
This is a five minute wonder. That's all it takes to put this together. And once you make this, it will be your go-to recipe for barbecues and family dinners. Everyone loves it, especially topped with ice cream.
Ingredients
- 4 ounces butter
- 1 16 ounce bag frozen peaches , unthawed
- 1 12 ounce bag frozen blueberries , unthawed
- 1 cup sugar plus 3 tablespoons for the top
- 1 cup self-rising flour
- 1 cup whole milk
- grated peel of 1 lemon
- juice of ½ lemon
- 1 pint vanilla ice cream
Instructions

Preheat oven to 400 degrees. Place the butter in a 10 inch pie plate and melt in the oven for 5 minutes until melted. Spread the frozen peaches and blueberries evenly over the butter. Squeeze the lemon juice over the fruit.
Make the batter:

In a medium bowl, whisk the sugar, flour, milk and lemon peel until well combined. Pour the batter evenly over the fruit and sprinkle evenly with the reserved sugar.

Place a sheet of aluminum foil under the pie plate and mold the foil around the dish to catch any spillover from the cobbler. You can also place the pie plate in a large roasting pan. Bake for 60 minutes until the top is crisp and brown. Check the cobbler after 40 minutes and if it is browning too quickly, lower the heat to 375 degrees. Let sit for 10 minutes before serving.
