People line up for hours to buy them right off a truck. So once you are lucky enough to buy some, you need to find incredibly creative ways to use them. Peaches–meet butter and sugar. A QUICK, DELICIOUS DESSERT
These Peach White Chocolate Bars come together quickly because the crust and the topping are the same. Slicing peaches isn’t exactly a hard job either. And, you will probably need a few extra because I ate two of them while slicing. So, here you have a great summer treat which makes the most of the peaches that are nothing short of spectacular.
Maybe they sell peaches in Kansas. Or New York. Or Vermont. And while I can’t speak to those, I can say that a Georgia Peach is quite an achievement and worth waiting in line in the blazing hot sun to buy.

Buttery Summer Peach White Chocolate Bars
These buttery, sweet bars are just full of fresh summer peaches. What a way to savor the summer long after peach season. Top these with some peach ice cream and you have summer's best dessert.
Ingredients
- 3 cups all-purpose flour
- ½ cup granulated sugar plus 2 teaspoons for the peaches
- ½ cup dark brown sugar
- ¾ teaspoon cinnamon plus ½ teaspoon for the peaches
- ½ teaspoon freshly grated nutmeg
- 2 sticks unsalted butter at room temperature it should still be firm
- 1 large egg lightly beaten
- ¾ teaspoon almond extract
- 5 thinly sliced fresh peaches
- juice and grated peel of one lemon
- 1 tablespoon tapioca starch or cornstarch
- 1 cup white chocolate chips
Instructions

Preheat oven to 375 degrees. Butter a 9-by-13 inch glass baking dish. In a small bowl combine 2 teaspoons granulated sugar and ½ teaspoon cinnamon and set aside.

In a large mixing bowl combine the flour, sugars, brown sugar, cinnamon and nutmeg with a whisk.

Break the butter into pieces and with your fingers massage it into the flour mixture until it is crumbly and well incorporated.

In a small bowl, mix the beaten egg with the almond extract and add to the butter and flour mixture, mixing well.

Slice the peaches and combine them with the lemon juice, lemon peel and tapioca starch.

Pat all but 1½ cups of the crumb mixture into the prepared pan. Spread the peaches over the crust, sprinkle with the reserved cinnamon sugar and cover the peaches with the rest of the crumbs. Bake for 20 minutes. Remove pan from oven and evenly scatter the white chocolate chips over the top and bake for another 20 minutes minutes until golden brown.

Cool the bars completely in the pan before cutting. Serve with a big scoop of vanilla or peach ice cream. Store leftovers in the refrigerator or freezer.
