Buttery Cracker Encrusted Fish Recipe

Ingredients
- 4 4 to 6 ounce boneless, skinless white fish filets (tilapia, halibut, cod or bass)
- Salt and freshly ground pepper
- 6 ounces unsalted butter
- 1 cup Dukes or Hellmann’s mayonnaise
- 1/3 cup parmesan cheese
- 2 cups Ritz crackers crushed
- 2 lemons
- 1/4 cup finely chopped parsley
Instructions

Preheat the oven to 375 degrees.

Pat the fish filets with a paper towel until completely dry. Salt and pepper the fish.

Put the butter in a 9 x13 inch glass baking pan on the top shelf of the oven. Remove the pan from the oven when the butter is melted but not brown, about 5-7 minutes depending on how cold it was.

Place the fish filets on top of the butter. Spread the mayonnaise evenly over the filets with a butter knife.

Combine the parmesan and crushed Ritz crackers in a bowl and sprinkle evenly over the mayonnaise. Gently pat the topping down until it coats each filet.

Spoon a little of the melted butter over each fillet by tipping the pan and collecting the butter for each piece of fish. Remember that the pan is hot.

Place the pan in the oven and bake the fish for 20 minutes until the top is crispy and the fish is flakey.

Remove the pan from the oven and squeeze the lemon over the filets. Serve with a sprinkle of finely chopped parsley.
