The second thing that elevates this carrot hummus to the top of the flavor scale is roasting the carrots in the above-described maple syrup. Bet you can tell I am having a hard time not writing like a lawyer anymore! I slip once in a while so forgive me.
Tahini makes this a well-rounded hummus.
Last but not least, there must be some tahini in hummus. The stuff in the grocery store which is a hard paste covered by a few inches of floating oil is just a pain to deal with. So I found Soom Tahini at Amazon and I am a changed person. Forever. This stuff is just as smooth and well-blended as the best peanut butter. No oil separation and no grit. It’s dreamy creamy. Maple Roasted Carrot Hummus
Creamy, bright orange and so delicious. It's a party in a bowl so invite a bunch of people to join you and you will increase your popularity for sure.
Ingredients
- 2 pounds carrots peeled and whole
- 2 tablespoons olive oil
- 2 tablespoons thick maple syrup like Brandless Organic Maple Syrup
- ¾ teaspoon sea salt
- 1/3 cup tahini well mixed and at room temperature
- ½ teaspoon cumin
- 1 teaspoon salt
- ¼ cup cold orange juice
- For garnish:
- 1 tablespoon olive oil
- ¼ cup finely chopped cilantro or Italian parsley
Instructions

Preheat oven to 400 degrees.

Plece all of the carrots on a large baking pan with sides. Combine the olive oil and maple syrup and pour the mixture over the carrots. Sprinkle the carrots with the salt.

Bake the carrots in the oven on the bottom shelf for one hour until they are soft.

Remove the carrots from the over and without letting them cool, put them in the Vitamix or a blender with the remaining ingredients. Puree the mixture until it is smooth and creamy. If the carrot hummus is too thick you can add ice water 1 tablespoon at a time until it is the desired consistency. Taste for salt and add more if needed.

Garnish the hummus with olive oil and chopped cilantro or parsley.
