I have been on a mission lately and the blog tells the story. The summer is ending, back to school advertisements for school supplies are everywhere, and tomatoes and corn will be disappearing. That is, tomatoes and corn that is actually fabulous. And sweet. And bright and fresh and all summery good. So here you go. Another summer Farmers’ Market recipe. I cannot stop. Buying or cooking. Or writing about summer vegetables.
Which brings me to the Grilled Glazed Salmon with Tomato Corn Saute which is basically a luscious sort of sweet and savory grilled salmon over, yes, you guessed it, tomatoes and corn. Summer on a plate.
My supermarket has the most incredible Organic Irish Salmon and, while it is expensive, I have yet to find salmon this tasty or with better texture. It is firm but not too firm and fresh as can be. I glaze it with a Sweet Thai chili sauce and then serve it over the Tomato and Corn Saute.
This grilled glazed salmon dinner comes together and is ready to serve in 30 minutes, if you buy one of these fantastic Kuhn-Rikon corn kernel removers. This is one of the best kitchen gadgets I have ever bought. No kidding. I have drawers of gadgets that collect dust but this corn stripper thing, also known as a corn “zipper” is just amazing. You can strip an ear of corn in less than 20 seconds. Just be careful you don’t cut the hand holding the corn off. Not a joke and don’t say I didn’t warn you. If you watch what you are doing, you will be devoted to this corn kernel remover FOREVER. Wow. I really went on and on about this but if you buy one you will see how your life will become so much easier. If you like fresh corn. If not, ignore ALL the above.
You can saute the vegetables while the salmon is grilling. No one wants to spend a lot of time in the kitchen when the summer days are waning. Is there anything better than a recipe that is quick and uncomplicated yet is “fancy” enough to serve for company? Enough said. Enjoy your summer days and hope they last long into the Fall!
Grilled Glazed Salmon with Tomato Corn Saute
The best of summer's bounty on a plate. Beautiful yellow corn and fresh, ripe tomatoes make a beautiful backdrop for salmon. This is perfect for a quick, outdoor supper with friends or family.
Ingredients
For the salmon rub:
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 ½ teaspoons of sugar
- 1 tablespoon sweet or smoked paprika
- ½ teaspoon ground coriander
- ¾ teaspoon cumin
For the salmon:
- 1 ½ pounds fresh salmon
- 1 tablespoon olive oil
- ¼ cup Thai chili sauce
- chopped cilantro for garnish
For the tomato corn sauté:
- 1 tablespoon olive oil
- 1 tablespoon finely minced garlic
- 6 ears of corn kernels removed
- 3 large tomatoes chopped and drained in a strainer for 10 minutes
- ½ teaspoon salt
- juice of one lime
- chopped cilantro
Instructions

Preheat a grill to medium high heat.
For the salmon rub:

Combine all ingredients in a small dish.
For the grilled glazed salmon:

Place the salmon on a sheet of aluminum foil and rub with the olive oil. Sprinkle the seasoning rub evenly over the salmon and put on the grill with the top down. Cook until the salmon is done to your liking.

Cooking time will depend on the thickness of the fish but generally 15-20 minutes will result in salmon that is juicy but not underdone. If you like your fish “rare”, 15 minutes is all you need. Once the salmon is done, pour the glaze over, close the grill and turn it off and let the glaze warm for 1-2 minutes. Remove the grilled glazed salmon from the grill and set aside for 5 minutes so it stays together when you slice it.
For the tomato and corn sauté:

While the salmon is grilling, strip the kernels from the corn and chop the tomatoes. In a very large skillet, heat the oil and garlic over medium high heat until the garlic is translucent. Do not allow the garlic to brown.

Add the corn and tomatoes to the skilled and stir everything together until the mixture is hot, about 10-12 minutes. You can increase the heat to high for the last 2-3 minutes to evaporate some of the liquid. Remove the skillet from the heat and add the salt, lime juice and cilantro.

Serve the grilled glazed salmon on a large platter with the corn and tomato mixture on the bottom, or arrange the salmon and vegetables on individual plates.
